Spelt Flour

Spelt flour is a flour which is particularly suitable for baking bread. The type designation 630 indicates the mineral content of the spelt flour. The higher the number, the higher the mineral content. Spelt is a forerunner of today's wheat and its own type of grain. Spelt flour is not gluten free. Spelt flour may have a higher gluten content than wheat flour, but the baking quality is worse. This is why spelt flour is often mixed with other types of flour.
