Soy sauce is made from fermented soy beans, cereals, salt and water. Light soy sauce is slightly salty and tastes slightly finer. Dark strong soy sauce tastes slightly sweet and spicy. In Asian cuisine, dark soy sauce is used to marinate meat and poultry, while light soy sauce is mainly used to season vegetables. Japanese soy sauce is generally somewhat milder than Chinese soy sauce.
