Sauerkraut is made from white cabbage (white cabbage, kabis, kappes). The addition of lactic acid bacteria preserves the finely chopped white cabbage. Wine cabbage or wine sauerkraut is additionally enriched with white wine. Sauerkraut is low in calories and fat-free, but is often prepared with fatty ingredients such as lard, knuckle of pork or bacon. Sauerkraut can also be eaten raw or processed into salads. But sauerkraut is usually stewed. In order to make sauerkraut more digestible, caraway is added to the dishes.
