Sauces Binder

Sauces Binder

In my recipes I use Sauces Binder for dark sauces. It contains, among other things, starch and colourings such as sugar couleur. Sauces Binder does not need to be stirred smooth with cold water beforehand, as is usually the case with starch, but can be sprinkled directly into the hot sauce, as emulsifiers prevent the formation of lumps. When the sauce is boiled up again while stirring, the Sauce Binder thickens the sauce.
