Sambal Oelek Paste is a thick red spice paste made from raw finely chopped chillies, salt and vinegar. Sambal Oelek paste is mainly used in Indonesian and Malai cuisine. There Sambal Oelek paste is placed in small bowls next to the food, so that everyone can season according to their own taste. One should season very carefully with Sambal Oelek paste, since it is very hot. Sambals come in three levels of sharpness: Sambal Oelek Paste is very spicy as it contains the white seeds of the chili pods as well as the chillies. Sambal Tjampoer is also very hot, but also contains crab extract. Sambal Badjak is a little milder.
