Salmon ham

Salmon ham is a particularly tender, mild and lean ham from pork and not, as one might suspect, from salmon. Actually, it is not a real ham either, but is only prepared like ham. The meat is lightly salted like ham and then cold smoked. The salmon ham is cut from the so-called salmon strand, the tender middle piece of the cutlet, whereby bones and fat are removed. Salmon ham is offered in various preparations: natural, coated with herbs, or wrapped in a thin layer of white bacon in Parisian style, which makes the salmon ham particularly juicy.
