Risotto rice

Risotto rice is cultivated in Italy mainly in the Po plain. The best known varieties used for risotto are Arborio and Vialone. Risotto rice is a special round grain rice that gives the best result for risotto dishes such as Risotto Milanese. The advantage is that risotto rice remains slightly firm to the bite during cooking. You can also use milk rice as an alternative, but this results in a poorer quality because the risotto becomes too soft.
