Rice flour

Rice flour is made from long grain rice and ground to very fine white flour. It is used like starch flour. Rice flour does not contain gluten, so it does not have any gluing properties. This is why rice flour can only be used to a limited extent for baking bread or pastries. In Thai and Asian cuisine rice flour is used for baking dough or as a binding agent for sauces. Rice flour is available in Asia shops or in Turkish grocery stores. It is usually packed in plastic bags.
