Red wine

If possible you should use the red wine for the recipes, which you also like to drink. The quality of the dessert or sauce depends on the quality of the wine used. Often only small amounts of red wine are needed and therefore one should not necessarily save there. Whether one prefers a dry red wine, a fruity or a sweet red wine depends naturally on the personal taste. One should consider however that e.g. a sweet wine fits well to a dessert, while a hearty sauce tastes better with a semi-dry or dry red wine. If you are not quite sure, it is best to use a slightly fruity, semi-dry red wine. Larger amounts of alcohol do not completely evaporate when cooking. This should be borne in mind when preparing meals and not more than 1/8 l of red wine should be used for cooking. In order to lengthen the sauces accordingly, the sauces should be filled with broth or water if possible.
