Shrimps and prawns are usually available frozen. The shell should be cut open on the spine with a sharp knife before preparation, so that the black intestine can simply be pulled out. The grey shell turns red when roasted or cooked. Frozen shrimps are also available cooked and washed. Only the tail ends are still on the body for decoration purposes. However, the grey shrimps taste more aromatic and the meat is much tenderer.
