Pork medallions

Pork medallions

Pork medallions are cut from the long fillet piece of pork. The medallions are up to 5 cm thick and round. The meat is particularly tender and only needs to be fried for a short time. If still present, the thin silvery skin, fat and tendons should be removed so that the pork medallions become tender when roasted.
