Pork knuckle

Pork knuckle is also called pig's knuckle, knuckle, stilt or sur knuckle. For pig's knuckle of pork, one usually uses the smaller front knuckle of the pig. The front knuckle is usually cooked. The larger rear knuckle is more fleshy and can be grilled well. Pork knuckle is traditionally served with sauerkraut. In the trade, both types are already offered salted.
