Pork fillet

Pork fillet, lummer or loin is the tenderest and fat-poorest piece of pork meat. The pork fillet is cut from the back loin and sits on the underside of the bone. One can buy the already released pork fillet as a long fillet strand, which is usually fried in the piece and is somewhat more expensive. Since pork tenderloin is very tender, one should not fry it however too long, so that it does not dry out. It is best to fry it only briefly all around and then let it simmer on a low heat in a few minutes. The thicker rear ends of the fillet strand are also offered somewhat cheaper as a pig fillet head. This piece can be cut very well into thicker slices, if you want to prepare e.g. pork medallions or nuts, which are also fried briefly. If you need a particularly tender meat for meat strips, you can cut the pork tenderloin into strips and fry. Also for fondue, diced pork fillet and other tender meats of veal or turkey are particularly suitable. Spicy marinated pork fillet can also be used very well for barbecue skewers.
