Pork cutlet

Pork chop is also called square or carbonade. It is cut into slices with bone from the ribs. The pork chop strand goes up to the hind leg. Pork chop cut from the front part of the chop strand is called a chop stalk or ribbed chop. Pigs chop from the back area is called lummer or loin chop. Pork cutlet is best for short frying or grilling.
