Pickled capers

Pickled capers (English Capers, French C√Ępres, Italian Capperi, Spanish Alcaparras) belong to the family of capers. Capers are the firmly closed flowers buds of the caper shrub. Fresh capers still taste bitter at first. Therefore, they are dried overnight in the so-called wilting process and then soaked in vinegar, oil or salt. Through this preservation, capers develop capric acid and mustard oil glycoside. This allows the capers to develop their typical sour, sharp taste.
