Curly parsley is milder than smooth parsley. Smooth parsley is very spicy and is therefore also suitable as a soup seasoning. Parsley is also called Peterle or Peterling. It is never cooked along with the food, but always sprinkled over the dish at the end so that the vitamins are preserved. Parsley is usually plucked fresh from the stem or finely chopped with a knife. The stems are very spicy and can also be used. Parsley goes well with almost all herb blends and is often used in herb sauces and fresh salads. She's rich in vitamins A, C and E. The typical slightly bitter taste of parsley comes from apiol, an essential oil. When parsley is dried, this taste fades away. The parsley root is also used to season soups and stews. Parsley has a slightly diuretic effect. If you have eaten onions or garlic, you can chew some fresh parsley afterwards to reduce bad breath a little.
