Parma ham (Prosciutto di Parma, parma ham, french ham) Jambon de Parme, ital. Prosciutto di Parma, span. Jamon de Parma) is an air-dried pig ham from the Italian province of Parma. Parma ham is a protected name and only ham produced in the Parma region can also be called Parma. Parma ham is a natural ham without preservatives. The climatic conditions in which the Parma ham matures are important in order to achieve its special taste. It is best to cut Parma ham into wafer-thin slices before eating, as it dries out quickly. Classic is Parma ham with melon as antipasti. Parma ham is very versatile in the kitchen, as you can see from my recipes below.
