If in my recipes there is only paprika, the colour of the paprika is not so decisive and can be chosen according to your own taste. However, often several peppers are needed and I like to use the colours green, red and yellow or orange in this case. Green pepper is rather hearty, slightly bitter in taste and slightly hotter. It is very suitable for braising, filling or gratinating. Sweet red and yellow peppers taste very good in salads or as raw vegetables with dips.
