Nut ham

Nut ham is a tender, dark red ham, which is only interspersed with a few fat fibres. Therefore, nut ham is less caloric than other ham with fat edges. As the name suggests, this ham is cut from the nut, a part of the leg of pork that is particularly tender and boneless. Nut ham is cured and cold smoked. The aroma it develops is mild and spicy. Nut ham tastes particularly good with fresh asparagus.
