I usually use fresh mushrooms in my recipes because they are more aromatic and firm than canned mushrooms. Mushrooms should not have brown bruises. The hat must be firm and white. The slats should be closed. Process mushrooms as freshly as possible or store them in the refrigerator for one day if necessary.
