Mascarpone Fresh Cheese is an Italian fresh cheese from the Lodi area made from cream. The cream is heated and coagulated with the help of acid, such as lemon juice. Then the cream is poured into cheese cloths and drips off there. Mascarpone Fresh cheese is creamy and easy to spread. It's more compact than fresh cheese. Mascarpone Fresh Cheese is very mild in taste and smells of fresh milk. Mascarpone contains approx. 80% fat in dry matter.
