Lime peel

Lime peel is particularly suitable for rubbing, as the peel is usually untreated. The limes should nevertheless be well washed and dried before rubbing. The skin contains aromatic essential oils. You can use a lemon grater to grate lime peel very finely if you want to use the peel in pastries, sauces or desserts. To season sauces you can also add lime peel in the piece and remove it before serving. Unlike lemons, the degree of ripeness can be recognized by the fact that the lime peel should be as green as possible.
