Lemon peel

Lemon peel is used from untreated lemons. The white skin is not used as it tastes slightly bitter. The easiest way is to rub the lemon zest with a fine lemon grater, which is then cleaned dry with a small brush. Grated lemon peel can also be dried, stored in jars and used for baking. For punch, cut the lemon peel into larger pieces and boil them with it. For spirals from lemon peel for the decoration of cocktails one uses a special Zesten Reißer.
