Leek onions are also called spring onions because they are on the market from February to July. It is not a small spice onion, but a special variety that looks almost like a small leek or leek. The green leaves can be used just like the white tuber. They can be eaten raw or stewed in a little fat. Leek onions should not be fried too much, otherwise they will turn brown and bitter.
