Lamb Steak

Fresh lamb steak is usually available around Easter time. The rest of the time you can use frozen lamb steak. Then, of course, it must be defrosted before roasting. Lamb steak is very tender and only needs to be fried for a short time. I also like to put fresh lamb steak in a marinade of olive oil, pepper, salt, garlic and rosemary before roasting.
