Juniper berries (French: Juniper berries, Juniper berries, Juniper berries) Baies de genièvre, ital. Bacche di ginepro, spanish. Bayas de enebro) are very spicy and taste slightly bitter, somewhat sweetish to resinous. If one keeps juniper berries dry and dark, keep their aroma 2-3 years. As the aroma only slowly dissolves from the juniper berries, they are allowed to boil in sauces for a long time. Crushed, they taste more intense. Juniper berries are mainly used for seasoning stains for game dishes or sauerbraten, in fish stock, sauerkraut or in dark sauces.
