Herbs of Provence or Herbes de Provence is a special herbal mixture of dried, crushed (grated) herbs of Provence that grow in southern France. The herbal blends may vary depending on the manufacturer, although the main blends are usually thyme, rosemary, oregano, marjoram, bean herb and lavender.
