Herbal butter (Garlic herb butter, French Beurre ravigote) is made from butter, salt, pepper, garlic and various herbs (e.g. parsley, chervil, tarragon, thyme, cress, chives etc.) and often still contains shallots and some lemon juice. Herb butter is also available in various variations, such as herb butter with lime, here you can add grated lime peel or herb butter with nuts, here you can add chopped and roasted almonds or pine nuts. If fresh chives are used in the herb butter, it is advisable to consume them immediately, as the chives quickly develop bitter substances. The same applies to onions. Herbal butter is available in the shops in the refrigerated section. Herb butter can be used in many ways, as a side dish from grilled to herb butter baguette, to canapes, on the cold buffet or to finger food. If you prepare herbs butter yourself, it looks nice when you use a piping bag and a star nozzle to spray small rosettes onto a baking tray lined with baking paper, place the tray in the freezer and as soon as the herbs butter rosettes are frozen, freeze them in a plastic tin until use.
