Head salad

Head salad is also called green salad. The best is tasted in the field lettuce, which forms heads weighing up to 500g. In winter, the head lettuce comes from the greenhouse, which means it has higher nitrate levels. Head salad keeps itself fresh in the vegetable drawer a few days if it is wrapped in damp newspaper. Do not store together with fresh fruit, as the head will wilt lettuce faster and get brown leaves. To get head lettuce leaves that are slightly wilted, fresh and crunchy, place them for a short time in lukewarm water to which you add some lemon juice.
