Gruyère cheese

Gruyere cheese (English Gruyere, French Gruyere, Italian Groviera, Spanish Queso gruyere) is a raw milk cheese made from cow milk. It belongs to the hard cheese varieties and has its name from its place of origin in western Switzerland. Greyerzer cheese has a slightly reddish brown rind and the cheese dough is yellowish with few small holes. Its taste is hearty piquant with a nutty aroma. Gruyère cheese is excellent as a grater cheese and for gratinating, but also tastes good as bread topping. Gruyère cheese is part of the Swiss cheese fondue and can also be used for raclette.
