Like gelatine leaves, ground gelatine is a neutral-tasting and odourless binding agent. Recipes with gelatine leaves can also be replaced by ground gelatine. 1 sachet of ground gelatine with 9 g content binds 500 ml of liquid and corresponds to 6 sheets of gelatine. Ground gelatine must also swell in cold water before further processing. The same applies as for gelatine leaves: first the soaked ground gelatine must be slightly warmed and stirred to dissolve.
