Ground almonds

Ground almonds are available in two varieties. Under the hard outer shell, which is first removed, the almonds surround a soft brown skin. Ground almonds with skin taste more intense and cookies or cakes become slightly darker after baking. Blanched almonds which are ground without skin are particularly suitable for fine cakes, tarts or biscuits which should remain light. Ground almonds can be used in recipes with or without skin as desired.
