Green pepper grains

Green pepper grains

In the recipes in which I write green pepper grains, I use the small green soft pepper grains that are available in jars on the spice shelves of supermarkets. For green pepper, use the unripe pepper berries, which are pickled in brine. Before use, it is removed from the brine and briefly rinsed under running water. Green pepper is quite mild, but very aromatic.
