Green Paprika

Green peppers taste more hearty and are slightly sharper than the sweeter red and yellow peppers. Green peppers have a slightly bitter taste. The substance capsaicin, which determines the degree of sharpness, is contained mainly in white partitions and white cores. Therefore the hides and seeds should be removed before further processing. Green peppers are particularly suitable for braising, gratinating and filling. In salads, green peppers should be mixed with red peppers or yellow peppers to soften the taste.
