Green olives can be bought with or without a kernel, which are usually preserved in a light salt lye with acidifiers. Green olives are often served with antipasti or tapas in Mediterranean cuisine. Green olives are also used to decorate cocktails or canap├ęs. They can be used to refine casseroles or paella and taste great with vegetable salad.
