Gouda cheese originally comes from the Netherlands. It was named after the Dutch town of Gouda. Gouda cheese is a cut cheese made from cow's milk. Its colour is light to dark yellow. The surface is very smooth, but has evenly distributed pea-sized fermentation bubbles. Young Gouda cheese is very mild and creamy. The older it gets, the stronger and spicier its taste becomes. Gouda cheese is very suitable for gratinating toasts or casseroles and gratins.
