Ginger consists of bulbous roots up to 20 cm long. The skin is beige to light brown. The flesh is yellow in colour. Fresh ginger is very juicy and firm. Dried ginger is flexible and looks wrinkly. It gets hard and woody. Fresh ginger tastes very hot and spicy with a slightly sweetish note. It should be used sparingly. In terms of taste, fresh ginger is not comparable to milder ginger powder. You break off a small piece of the root, scrape off the skin and grate the ginger. You can also cut it into thin slices, dice it or press it through the garlic press. Ginger is prepared in fruit salads, ginger biscuits, tea, meat dishes or for Asian recipes in the wok. Remnants can be kept in foil in the refrigerator for up to three weeks. If the ginger is already peeled, it can be placed in a glass, sprinkled with sherry and closed with a lid. Ginger is also used in ginger ale.
