Frozen spinach

Frozen spinach does not necessarily contain fewer nutrients than fresh spinach. Frozen spinach is available as leaf spinach or finely chopped spinach. Some frozen spinach is already seasoned or refined with sauce and cream. However, since frozen spinach also enriches nitrate and oxalic acid, it should be blanched as briefly as possible in boiling water before use. This reduces the nitrate content by about 70%. The cooking water, however, should not be used any further.
