Fresh Parmesan cheese

Fresh Parmesan cheese comes from Northern Italy. It is an extra hard cheese, which can be grated very well. One can plane young Parmesan cheese but also with a cheese slicer into fine slices. However, fresh Parmesan cheese becomes crumblier the older it gets. Then it also tastes spicier. Fresh Parmesan cheese can be kept in the fridge for about 4 weeks if wrapped in cheese paper or foil and stored in the vegetable compartment.
