Fresh herbs (English: Fresh herbs, French: Fresh herbs) Herbes frais, ital. Heir fresco, span. Hierbas frescas) are much more intense in taste than dried herbs. Fresh herbs have a stronger aroma and you should always use fresh herbs for cooking if possible. If fresh herbs are offered for sale standing in the water, always smell the stems. If the stems already smell musty, the herbs have been in the water for too long and are no longer fresh.
