The weight classes of eggs are subdivided as follows: S/small - under 53 g, M/medium from 53 g, L/large from 63 g and XL/very large over 73 g. The colour of the eggshells, whether brown or white, depends on the breed of chicken. The laying date and minimum shelf life date are printed on the packaging. Eggs don't taste so good on laying day. They should be 3-6 days old before they are eaten. For cake recipes I use class M eggs. The right size is crucial for a good baking result. For egg dishes, the size can be chosen at will.
