Egg yellow is also called egg yolk. The colour from pale yellow to strong orange depends on the feed mixture. But it says nothing about the quality of the egg yellow. In some recipes an egg yellow is added to an egg to give a stronger colour to the cake, sauce or dessert. If you heat egg yellow for cream dishes in a water bath, the water should not be too hot so that the egg yellow does not stick.
