Dried eggplant is available in Turkish food shops. They should be soaked in hot water for a few minutes before further use. 10 grams of dried eggplant weigh 40 to 50 grams after swelling. They are then soft and begin to smell intensely of aubergine. Dried eggplant can then be used like fresh eggplant. Since it is harvested in summer, dried eggplant tastes particularly aromatic.
