Stew cucumbers are free-range cucumbers that are particularly suitable for stewing or gratinating because of their firm flesh. Stew cucumbers contain less water than salad cucumbers and do not disintegrate so quickly when stewed. The colour of the thick skin is yellowish green. Cut off the sometimes bitter end pieces generously before peeling. Cucumbers contain relatively hard kernels. That's why you should remove the seeds before stewing. You can also stew cucumbers as mustard cucumbers sweet and sour.
