Spice Cucumbers (French: Spice cucumbers) Concombres d'épice, ital. Cetrioli della spezia, span. Pepinos de la especia) are small pickled cucumbers pickled with vinegar, herbs and spices. Smaller spice cucumbers are also called gherkins. Cucumber spices can be eaten as a low-calorie snack or used in savoury salads. Cucumbers can also be cooked in stews or hearty meat dishes. The pickle liquid of the cucumber spice can also be used to season salad dressings such as mayonnaise.
