Cinnamon stick is also called Caneel or Kanehl. The inexpensive tangier tasting cinnamon stick mostly comes from China, while the higher quality Ceylon cinnamon stick tastes more flowery and aromatic. The dried bark of the cinnamon tree rolls up from both sides towards the middle, so that the cinnamon stick is formed. It is cooked in Glüh wine, punch, elderberry berry soup, plum soup or compote. Cinnamon sticks keep dry, dark and sealed in glass stored 3 to 4 years.
