Chicken breast fillet (narrow Breast of chicken, french chicken) Suprême de volaille, ital. Petto di pollo, span. Pechuga de polloo) is used either by the slightly smaller chicken or the larger poulard. One receives in the trade either half or whole or double chicken breast fillet. Skin, chest leg and rib bone have already been removed from the fillet. It consists of pure muscle meat and is very lean. Chicken breast fillet is suitable for many chicken recipes, because you can prepare it in the piece as a small roast, cut into slices and fry or grill, dice for skewers, or prepare as a strips with sauce. Chicken breast differs from chicken breast fillet in that chicken breast still contains skin, breast leg and bone. It is particularly suitable for grilling or braising.
