Butterfly steak is cut from the pork salmon steak. The name is given to this tender steak because it is only cut through to the middle, giving it the shape of a butterfly. It is excellent for frying or grilling and remains tender when salted after frying. Butterfly steak can also be filled very well and folded like a bag.
