Buffalo Mozzarella

Buffalo Mozzarella or Mozzarella di Bufala Campana from Italy with 52% fat in dry matter is made from 100% buffalo milk. In terms of taste, the spicy buffalo Mozzarella differs greatly from simple mild Mozzarella, which is usually made from cow's milk. The Buffalo Mozzarella is not as firm as normal Mozzarella and due to the higher fat content has a better melting ability, which makes it particularly suitable for gratinating.
