When I write broth as an ingredient in my recipes, I always mean clear sifted broth that I have cooked myself without meat or vegetables in it. This is not as complicated as you might think, because when cooking poultry, meat or bones, for example, you can freeze the unused broth in 1/4 litre portions and use it so quickly. Some recipes also produce a broth, which is then used for the sauce, for example.
